Mrs. Chan's Table in the Black Camel

For Labor Day, Mrs. Chan* has included a recipe from Helen Corbitt (the former master chef of Neiman-Marcus fame who had a multitude of her cookbooks published over the years plus giving master classes that included Mrs. Chan* herself!).

You can fix it ahead as is and/or adapt it to your tastes and/or needs, as Mrs. Chan would herself!

Chicken Salad Supreme

2 1/2 cups cold chicken, cooked and diced
(save some thin slices for garnishing)
1 cup celery, chopped finely
1 cup white grapes, halved
1/2 cup slivered almonds, toasted
2 tablespoons minced parsley
1 teaspoon salt
1 cup mayonnaise
1/2 cup heavy cream, whipped
(stuffed and/or ripe olives for garnishing)

Combine and serve in lettuce cups with thin
slices of chicken on top, garnished with stuffed
olives, sliced thin, or chopped ripe olives.

Mrs. Chan is also known as Becky Truesdale,
my honorable # 1 mother!

"Thank you so much." Just imaginining this recipe, substituting veggie chichen substitute (Morningstar Farms), in the case of yours truly, makes for a very pleasant thought, indeed!
